I got inspired from 101 cookbooks. I mostly followed the recipe here. http://www.101cookbooks.com/archives/roasted-corn-pudding-in-acorn-squash-recipe.html
Things I learned. I really don't care for anise (who knew it tasted like licorice?) and cheese inside of the corn pudding would have made this even better.
presentation wise though, it wins hands down.
These were delicious -- and oh so pretty! They inspired me to make something similar for Thanksgiving. I roasted the acorn squash in the same way and then filled them with my family's favorite corn casserole (much heavier on the corn and cheese, and minus the anise, scallions, and nutmeg). Obviously the filling was much more corny, but it totally worked and got rave reviews.
ReplyDeleteI didn't realize your's had anise in them until I looked at the recipe. And I must confess that I also didn't realize the brussel sprouts (which were delicious, by the way) had pistachios in them (and I would have sworn I hated pistachios)! Hmmm... what does this say about my taste buds...
When you have a chance, can you post the broccoli soup recipe too? I loved that too!
Oh, I am a total whore for anise! I loves me my black licorice, Ouzo, pastis, black jelly beans... you name it. So I thought the anise was lovely surprise in the corn pudding; I wouldn't have changed a thing. :) Thanks for sharing the recipe!
